The Seven Medicines will be the focus of our last class in this series, which will take place after this one.

HONEY

For thousands of years, honey has been recognized as a medicinal material. Honey water, vinegar water, and honey/vinegar water were the principal treatments used by Greek medics. Honey is mentioned 500 times in 900 cures in Egyptian medicinal literature from about 2600 BCE. What is it about honey that sets it apart from other foods?

First, honey has antimicrobial properties. Skin, gastrointestinal, respiratory, and other organ-system infections are all treated with it.

Second, honey is hygroscopic, a fancy term for "water-loving," as the definition implies. Honey acts like a sponge, absorbing moisture from the air and retaining it in the region where it is applied. After a honey facial, your skin will feel silky soft and taste divinely moist. Honey's anti-infective and hygroscopic properties make it an excellent healer of wounds of all types, including burns, bruises, and decubitus (skin ulcers), an excellent soother for sore throats, a strong ally against bacterial diarrhea, and a counter to asthma, among other things.

As the last point, honey may contain up to 35% protein. Because of the easily accessible carbohydrate content (sugar), this gives you a significant boost in energy and acts as an antidepressant. It's been suggested that honey may restore energy on par with or even better than ginseng, according to some sources. Both inside and topically, honey's proteins help heal.

Vitamin B, C, D, and E are all in honey, in addition to a few minerals. It seems to boost the immune system and even cure cancer, according to some authors.

There was an 84% decrease in allergy symptoms when allergy patients ingested one teaspoon of honey a day for three months of the year plus three times a week in the winter, according to one study.

A potent antibacterial material, propolis is derived from resinous tree saps produced by the bees. A tincture of propolis may be used to treat bronchitis, sinusitis, colds, flu, gum disease, and tooth decay by diluting it with pure grain alcohol (resins don't dissolve well in 100 percent vodka, my first choice for tinctures).

WARNING: Botulinus spores are present in all honey, but particularly raw honey. Children under the age of one year may not have enough stomach acid to prevent the development of these spores into botulism, a lethal toxin. Adults are not at risk.

MINERAL HONEY

To make herbal honey, you start by pouring honey over fresh herbs and allowing them to mingle for a few days to a few months. Most volatile oils found in herbs are anti-infective, and when they are infused into honey, they are absorbed by the water-loving honey. In addition to being therapeutic, herbal honey is delicious. Seeing my collection of natural honey makes me feel like a millionaire.

EXERCISE YOUR ROSEMARY HERBS

Add a little herbal honey (with the herb) to a cup, then fill the rest of the way up with hot water, mix, and enjoy! Or, to soothe and treat sore, sick throats and tonsils, take spoonfuls of herbal honey straight from the jar. Wounds and burns may be treated with honey (no herbs, please).
